I discovered red velvet pancakes at a restaurant and have been obsessed ever since.
I put together an easy recipe that can be made Christmas morning without taking up too much family time. These make the perfect Christmas morning feast and will have your house smelling like heaven on earth.
Makes 8 large pancakes
Ingredients:
Pancakes 2 cups red velvet cake mix (I used Duncan Hines) 1 cup all purpose flour 1 1/2 cups of soy/coconut milk OR water 1 banana

Directions: Place pan on medium heat. In a large bowl mix together all of the pancake ingredients. Beat by hand for 3-4 minutes or until the mixture is smooth, with no clumps. Grease the pan with earth balance butter or oil. Switch to medium-low heat. (so they dont burn!) Pour the mixture into the pan and cook on each side for approx 1 min. (or until lightly browned) Repeat until all mixture is used and pancakes are cooked.
Top with some Canadian maple syrup and “cream cheese” icing!
