This salad is as delicious as it is beautiful. With a couple additions to a traditional Greek salad, this just might be the best Greek salad you've ever had!
Ingredients for Salad:
2 cups mixed greens 2 cups cherry tomatoes, cut into quarters
1 cucumber, peeled and chopped
1/2 cup Kalamata Olives, halved
1/4 cup sun-dried tomatoes, chopped
1/4 red onion, thinly sliced
3 tbsp fresh dill
2 green onions, sliced
Ingredients for Dressing: 1/4 cup olive oil
2 tbsp red wine vinegar
Salt and pepper to taste
1 clove garlic, finely chopped
1 tsp dried oregano
Directions:
- Whisk together all ingredients for dressing, set aside
- Combine tomatoes, cucumber, olives, sundried tomatoes, dill and onion in bowl and toss with dressing
- Place mixed greens on a plate, as the base
- Add combined mixed veggies on top of bed of mixed greens
- Garnish with green onions
